Microgreens are basically, a young vegetable or herb picked after its two first leaves come through.  Sounds simple enough but when you delve deeper you find that these amazing wee sprouts are so much more.  They are literally the superheroes of the vegetable world , not only do they have intense aromatic flavour and come in a variety of colours and textures, but there concentrated nutrient content is out of this world.

Microgreens are packed with 40x the nutritional value of their fully grown counterparts lets take broccoli as an example.  Broccoli microgreens have concentrated levels of vitamins A, B, C, and E, the minerals calcium, copper, iron, magnesium, phosphorus and zinc. They also contain high levels of compounds that once consumed convert to sulforaphane.

Sulforaphane has potent cancer preventative effects and is also widely being investigated for its benefits for cardiovascular health, diabetes, inflammatory conditions, autism, and more.
